Will's Granola

4 ˝ cups old fashioned rolled oats
3/4 cup shelled raw unsalted sunflower seeds
1 ˝ cups slivered raw almonds
2 tablespoons of cinnamon
1/3 cup pure maple syrup
1/3 cup honey
1/3 cup agave
1/3 cup canola oil
˝  cup craisins
˝ cup raisins
Mix oats, sunflower seeds & cinnamon in large bowl.  Add liquids.  Stir together and allow to sit for at least 30 minutes.  Stir occasionally
Preheat oven to 325 degrees
Spread in a jelly roll pan and bake for about 25 minutes, stirring 10-15 minutes. Bake until it begins to turn brown.  Add nuts and bake a few minutes more.  After taking out of the oven add craisins & raisins.

Will is sometimes a bit creative & adds other kinds of nuts, fruits & seeds. He particularly likes Trader Joe’s Toasted Almond Slivers and Toasted Sunflower Seeds
Baked Oatmeal from the Kitchen of 803 Elizabeth Bed & Breakfast, Matthews NC

1/3 cup of oil or 2/3 cup of apple sauce
2 Tablespoons maple syrup
1 large egg
2 cups of oatmeal
1 1/2 tsp. baking powder
1   cup of apple juice or milk
1 cup of dried fruit- raisins, craisins, chopped apricots etc - can also add nuts
1 tsp. cinnamon
Mix the above and bake for 30 minutes at 350 degrees.  I usually mix the night before, cover  and refrigerate.  Bake in the
morning. 



Overnight French Toast

Spray 3 qt. dish with Pam
Cut up a loaf of French bread in 1" pieces and place in dish
Mix together
6 eggs
1 ˝ cups of half & half
1 ˝ cups of milk
1 tsp. vanilla
1 tsp cinnamon
˝ tsp nutmeg

Pour over bread & cover
Put in refrigerator overnight

Topping
˝ cup of butter
˝ cup of brown sugar
˝ oatmeal
˝ cup flour
Mix together until crumbly & then add
 ˝ cup of chopped nuts

In the morning crumble the topping over the bread and bake at 350 degrees for about 40 minutes


Note: I saw this topping on a Martha Stewart program.  You can adjust the quantity to whatever amount you need.  Just mix equal quantities of the five ingredients.  Cinnamon & nutmeg can also be added.  I use it on everything from a cobbler to muffins

Breakfast begins with homemade granola, fresh fruit and plain yogurt.  You may choose from homemade muffintops, eggs, breakfast casseroles or baked oatmeal for your second course. We try to accommodate guests by giving a choice for breakfast.  With advance notice, special dietary needs are happily met.

Breakfast can be served in the sunroom or front porch, weather permitting.
